Christmas Recipe | Mince Pie Cheesecake

Chef Grant’s Mince Pie Cheesecake combines the festive flavours of rich, spiced mince pies with the creamy decadence of cheesecake for a delicious Christmas treat!

It was such a hit at our Christmas events that we just had to share the recipe!

Ingredients

Base

  • 300g ginger nut or other biscuit
  • 125g butter

Filling

  • 250g cream cheese
  • 250g mascarpone
  • 300ml double cream
  • 50(ish)g icing sugar
  • 400g mincemeat

 

Method

  1. Blitz 300g biscuits in food processor then add 125g melted butter, mix until saturated.
  2. Press base into a loose bottom cake tin, flatten with the bottom of a glass, then freeze until firm (15-20 mins).
  3. In a mixer, add both cheeses and the icing sugar then whip until smooth.
  4. Now add all the double cream and mix on a medium speed until just past soft peaks.
  5. Use a food processor to blend the mincemeat until a smooth paste.
  6. Add a good amount of the paste into the cheese mix and gently combine. Then continue to add in small amounts, tasting until the mince pie flavour is strong but the cheese is not lost.
  7. Add filling on top of base and put back in the freezer.

Remove from tin while still frozen and remove from freezer a little while before you cut it.
